Vanilla Strawberry Swirl Ice Cream

It’s summer, it’s HOT, and it’s time for more ice cream.  Here’s our latest creation, a take on one of my favorite childhood recipes: Vanilla Strawberry Swirl ice cream.

You can use your favorite vanilla ice cream recipe, we used the basic Cuisinart Simple Vanilla recipe.

Ingredients

  • 1 cup whole milk
  • ¾ cup granulated sugar
  • pinch salt
  • 2 cups heavy cream
  • 1 tablespoon pure vanilla extract

Sauce Ingredients

  • Strawberries: 16 ounce basket of strawberries
  • Sugar: 1/2 cup

Instructions

  • In a medium bowl, use a hand mixer on low speed or whisk to combine the milk, sugar and salt until the sugar is dissolved.
  • Stir in the heavy cream and vanilla.
  • Cover and refrigerate 1 to 2 hours, or overnight (optional).
  • Sauce
    • Hull and blend the strawberries
    • Push the strawberry mix through a small sieve to remove the strawberry seeds
    • In a small saucepan heat the strawberry mix and the 1/2 cup of sugar on medium until sugar dissolves.  Raise to a boil, then reduce to simmer for 5 minutes.
    • Let cool, then refrigerate until the ice cream is ready.
  • Turn on the ice cream maker; pour the mixture into the frozen freezer bowl and let mix until thickened, about 20 minutes. The ice cream will have a soft, creamy texture.
  • Put about half of ice cream in an airtight container, add a layer of strawberry sauce on top.  Repeat.  With a butter knife, gently swirl the sauce through the ice cream
  • Place the covered container in the freezer to harden.
